Study Tour on Fish Processing and Value Addition in Thailand

Aquaculture and Aquatic Resources Management (AARM) Academic Program of the School of Environment, Resources and Development, the Asian Institute of Technology (AIT), organizes a study tour to gain first-hand experience of the fish processing and value-addition for small-scale fisheries and aquaculture operators. This exposure visit program is useful if you belong to entrepreneur operating Small and Medium Enterprises and looking for innovative ways to add value and market your fishery products either for the domestic or export markets.

Main purpose of the study tour is to visit commercial enterprises produce value added fish products such as fish sauce, dried fish, etc., and to observe and learn food safety practices and management systems followed in Thailand. The study tour covers the following activities in Central Thailand:

Fish drying and fish sauce production:

  • Snakehead (Channa striata) drying.
  • Snakeskin gourami (Trichogaster pectoralis) drying.
  • Fish sauce production facilities.
